Description
A delicious twist on classic grilled cheese with smoky BBQ chicken and melted cheese on toasted bread.
Ingredients
1 ½ cups cooked shredded chicken (rotisserie or leftover)
½ cup BBQ sauce
4 slices sourdough or thick white bread
1 to 1 ½ cups shredded or sliced cheese (cheddar, mozzarella, or blend)
2 tbsp butter
Instructions
Combine the shredded chicken and BBQ sauce in a bowl, stirring until coated.
Butter one side of each bread slice.
Place a slice of bread butter side down on a medium heat skillet.
Layer cheese, BBQ chicken mixture, and more cheese on the bread.
Top with second slice of bread, butter side up.
Grill until golden brown and cheese melts, about 3-4 minutes per side.
Remove sandwich, let rest 1 minute, then slice and serve warm.
Notes
(Optional) For added flavor, try adding sliced red onions, jalapeños, or fresh cilantro. Use your favorite BBQ sauce (spicy, sweet, or tangy) to customize.
